I'm cooking the TG dinner today for my gang, and celebrating hubby's BD--so everyone have a safe weekend. Gaah, Hams were as much as $60.00 med size. What's up with that! Hubby got ours for over $30.00-more small than med.
NOPE :) I didn't get done on line Christmas shopping, lol. still need about 5, including something for Mom. And I gotta fill 7 stockings, so I'm going to have to budget carefully....cause I also spend alot on christmas dinner, it's the meal of the year, a feast of sorts, where we do different ethnic dishes.... Sigh, I suck at shopping for people, though, rofl. I've never been one of those women who get excited about it because I've had to watch my pennies. For everyone who is braving this black friday shopping day, you are braver than I. lol. I've got a bunch yet to do and I'm finishing on line today! (you can do the same Black Friday shopping that way) and they don't run out of stock usually. My daughter tells me she is going out to do hers today at the stores. Yipes. I don't have anything but kids helments and knee pads here to protect me from crazy shoppers (I still recall my MIL telling about last year, or year before when a woman ran in and held onto a wide screen TV and snarled at anyone who came near it until her hubby could pay for it- rofl. No Thanks, I see enough rabid people on the road during regular days.

Aside from being Thankful for my family, my health and the small blessings that make life richer than money affords, I am Thankful also to readers who allow me to do what I dreamed of doing for 30 years, write. Happy Turkey Day everyone (smile) We are doing dinner this weekend (combining hubby's birthday, which was the 24th with TG, since my children need to have holiday dinner with their in laws, g parents on this Thanksgiving Day. My kids never liked Turkey so we have ham on the menu.
However, today I thought about one of our early Thanksgivings, when the kids were little; we couldn't afford much so we bought a fryer (chicken) for $4 and had Mac and cheese lol. Here it is again. the rice dish I make with cornish hens (very low cost fowl) and for a party or guests, put the hens in a round tray, pile the rice in the center and garnish. (This dish even with the hens doesn't cost much, but looks and tastes wonderful!
The Wild rice basics (you can vary this)
Wild rice or brown rice
any Mushrooms- portabella mushrooms
broth (I use chicken)
Almond slivers
dried cranberries
Cook the rice in the broth. Sautee the portabella mushrooms (in red wine or in whatever you like-set aside for topping) Mixing this dish together: add packs of dried cranberries, I add in almonds next, and button mushrooms, too if you like. (Those mushrooms I cook in the broth with some seasonings) After mixing that up, you can spread in a dish, then layer the portabella mushrooms on top, with almonds, or sprigs of parsley.
